Rezumat
Deşi procesul de producerea berii variază de la o ţară la alta, putem totuşi enumera procesele principale ca fiind:
fermentarea, maturarea şi stabilizarea la rece. În timpul procesului tradiţional de producere a berii, mustul obţinut prin extracţia malţului este inoculat cu drojdie de bere şi fermentarea este lăsată să continue timp de o săptămână, la temperaturi cuprinse între 8 – 14°C. După ce fermentarea este completă şi, mai mult, zaharurile fermentescibile au fost transformate în alcool, drojdia va sedimenta. Berea tânără rezultată în urma fermentaţiei primare va mai conţine drojdie reziduală, cu atât mai mult cu cât nivelul componentelor aromatice nedorite va fi mai ridicat, în mod special dicetonele . Conversia ultimelor componente în compuşi buni la gust este un aspect important al fazei următoare – maturarea berii la o temeratură de 2°C/5-6 zile. Dacă dicetonele vicinale au atins un nivel acceptabil, berea este răcită şi depozitată la temperaturi sub 0°C. În timpul fazei de stabilizare la rece, precursorii formării trubului aglomerează şi precipită. În final, tratamentul cu polivinilpolipirolidonă (PVPP) şi/sau gel de siliciu, împreună cu kieselgur-ul sau filtrarea cross-flow vor duce la obţinerea unei beri limpezi, care nu prezintă schimbări vizibile în timpul comercializării (pe perioada termenului de valabilitate). Ca rezultat, acest procedeu convenţional de obţinere a berii durează aproximativ 17 până la 20 de zile.
Există şase tipuri a stabilităţii berii: coloidală, microbiologică, spumei, aromei, culoarei şi aşa numita ţişnirea berii. Primele două sunt în general cu referire la tulbureala din bere şi vor fi discutate aici. Tulbureala biologică este cauzată de contaminarea microbiană şi este evitabilă prin atenţie şi utilizarea unor proceduri de bune practice. Tulbureala coloidală este mult mai importantă şi reprezintă obiectul de bază al acestei lucrări.
Scopul lucrării este de a oferi un studiu aprofundat şi extensiv cu referire la toate aspectele a berii, aromă, stabilitate şi solubritate.
